I haven’t had much time to bake lately. I don’t like it. There’s nothing I enjoy more than spending hours in the kitchen baking but current circumstances won’t allow it, so I need to find recipes that don’t take to long to make.
These muffins are perfect – very quick to make, so easy and very yummy!
Banana Fudge Muffins – adapted from Nigella Express by Nigella Lawson
125ml vegetable oil
2 medium eggs
1 tsp vanilla extract
250g Plain flour
125g caster sugar
½ teaspoon bicarbonate of soda
1 teaspoon baking powder
100g packet of fudge chunks (I used a mixture of Dr Oekter and Thorntons clotted cream fudge because I needed to use some half packets up. I cut the Thorntons fudge into smaller pieces.
Preheat the oven to 200°C/gas mark 6. Line a 12-bun muffin tin with muffin papers.
Mash the bananas. Pour the oil into a jug and beat in the eggs and vanilla extract.
Place the flour, sugar, bicarbonate of soda and baking powder into a large bowl and mix in the egg and oil mixture, followed by the mashed bananas. Stir in the fudge chunks.
Spoon into the muffin liners (I use an ice cream scoop) and bake for 20 minutes. Eat! 🙂
