I still have a bit of a cupcake obsession and there is no sign of it going anywhere soon! When I noticed the bananas in the fruit bowl that were looking a bit past their best I had planned to make my usual banana loaf..until I started reading Martha Stewart’s Cupcakes book. When I noticed a recipe for Banana cupcakes I had to give them a try.
These cupcakes are delicious and very moist. The caramel buttercream sounded gorgeous but I have to admit I didn’t make it. It is a swiss meringue buttercream and that night I just couldn’t face making caramel and whipping egg whites for ten minutes. I’ll try that one when I have more time on my hands 🙂 I ended up making up a buttercream icing and stirring through a couple of generous spoonfuls of that heaven in a jar, Dulce de Leche. That stuff is dangerous!
