Nutty Nuggets of Deliciousness

A fellow blogging friend of mine, lovely Maria of The Goddess’s Kitchen posted these gorgeous little morsels way back in March 2012 and I’ve been meaning to make them ever since.  But every time I tried to make them, I would find myself out of an essential ingredient, whether it was Nutella, ground almonds or hazelnuts. Grrrrr. I thought I was fated not to make them.  I ended up forgetting all about the recipe until Maria posted a picture of them on her Facebook page a couple of months ago.  I was determined to make them this time so I duly wrote down ground roasted hazelnuts on my shopping list and made sure I had an extra jar of Nutella hidden away in the cupboard (if you’ve seen the way my boys devour the stuff you’d understand why I have to hide it!)

Now of course, I’m wondering why I waited so long to make them.  They are super easy and quick to make. A quick blitz of the ingredients in a food processor and that’s it ready to be rolled into little balls and baked.  Once cooled, these nutty little biscuits are filled with Nutella and sandwiched together.  They actually melt in your mouth and have a lovely texture. Absolutely scrummy.

100g whole blanched hazelnuts* (I used ready roasted, chopped hazelnuts which of course makes this recipe even easier. I bought mine in Sainsburys but you could probably find these in most Supermarkets)
100g ground almonds
150g plain flour
60g  caster sugar
150g butter, softened
Chocolate hazelnut spread (nutella)

Preheat the oven to 180oc/fan oven 160oc/gas mark 4.

Line 2 baking trays with baking parchment. Spread the hazelnuts out on a roasting tray and place in the oven for 8-10 minutes, or until lightly golden. Leave to cool slightly, then blitz the nuts in a food processor into fine crumbs. *Obviously if you are using the ready roasted chopped hazelnuts you can skip this step*  I was very glad to since  my kids were hyperactive today!

Add the ground almonds, flour, sugar and butter to the processor and whizz until it all comes together.

Roll teaspoon-sized amounts of the mixture in your hands to make balls of dough the size of large marbles. Slightly flatten, then space out on baking trays and bake for 15-20 minutes.

Cool completely on the trays then sandwich together with a blob of chocolate spread.
