Hello! Things have been a bit quiet on the blog lately.   It’s been a pretty busy time for me in the kitchen.  I’ve been doing lots of baking for friends and family and I’ve got a lot of recipes to share with you over the next couple of weeks – so watch this space!

It was my Birthday on Sunday, which also happened to be Father’s Day in the UK.  So of course I had to bake a cake for the double occasion – and I wanted it to be a showstopper!

I saw the most gorgeous looking cake on The Pink Whisk’s website – (The Pink Whisk is Ruth Clements – she came second in series one of The Great British Bake off.) The cake in question was a white chocolate mudcake. It looked so amazing, covered in chocolate drizzled strawberries and finished off with a white chocolate colllar. Having found strawberries in the Co-op at the bargain price of £2 for two large punnets and after raiding my chocolate supplies box and realising I had about six bars of Sainsburys basic white chocolate (at 30p a bar! This stuff is fantastic value for baking) it seemed like I was meant to bake this beauty of a cake.

This was the first time I had ever made a mud cake.  I’ve heard about them and knew they are extremely popular in Australia.  It definitely won’t be the last time I make one – they are so incredibly moist and delicious!  I’m a new fan of the mud cake and it made a nice change from my usual vanilla sponge.

This was also my first time making a chocolate collar.  I was worried I would end up with a disaster on my hands but I took my time and read through Ruth’s step by step instructions on her blog.  I have to admit I’ve always liked the look of chocolate collars but I was always a little scared to try them! But thanks to Ruth I realised that they aren’t so difficult.  You just need a little patience.  And ideally a kitchen that isn’t too hot.  My boys were most impressed!   1. Happy belated birthday! You rocked the chocolate collar – it looks amazing! I’d be way too intimidated to make something like that. This entire cake sounds divine. I love the combination of white chocolate and strawberries. I hope you enjoyed every single bite!


    1. Thank you! 🙂 I wondered the same, but the cake is very easy to cut with the collar – I just used a sharp knife and it was fine. The chocolate didn’t break so I was able to cut into neat slices.
