Chunky Monkey Peanut Butter Bars


Hello! Here we are at Monday again *sigh*

Why do the weekends go by so quickly?

Here’s an easy and utterly delicious bake to help make Monday a little less painful… chunky monkey peanut butter bars.

As soon as I spotted this traybake on Baking Joy I knew I had to make it.

Soft, moist banana cake studded with chocolate chips & walnuts, topped with peanut butter and milk chocolate. Yes please!

My two favourite Ben & Jerry’s flavours are chunky monkey and peanut butter cup, and this cake is a combination of those flavours in cake form. Genius!

You’ll find the original recipe right here.  If you love chunky monkey ice cream you need to make this cake!

I’m not typing the recipe out here because all I did differently was add 1tsp vanilla to the banana cake, swapped the pecans for walnuts and used milk chocolate chips.

This would be completely over the top wonderful with a few chopped up Reeces pieces stirred into the batter before baking…or it might be overkill.  It would depend on how much you love peanut butter I guess 😉
