Oreo Fudge Brownies


This week is both National Baking week and National chocolate week, so perfect excuse to make these Oreo fudge brownies.  My own excuse was my nine year old son begging me to make them. I haven’t made them in years, he bemoaned.   So how could I deny him? Especially after the guilty, bad mummy look I got last weekend while leaving the house for a party last Saturday night, carrying a box of these brownies under my arm.  The fact that they were more of a grown up brownie, packed with cherries, cherry brandy and walnuts meant nothing to him.  So it was clear I had some making up to do.

I’ve fiddled about with this recipe and I’m finally happy with it.  It produces a brownie that is slightly crispy around the sides and a slightly gooey, fudgy centre.  If you prefer your brownies with more goo, just add 25g less flour.

Oreo Fudge Brownies

175g Butter
225g Dark Chocolate
4 Eggs
200g Caster or soft light brown sugar
2 Tsp vanilla extract
2 tbsp Cocoa Powder
75g Plain Flour
1 pack Oreo Biscuits, each one broken into four pieces or left whole,if you prefer

I get nine brownies from this recipe, but of course you could always cut them into smaller pieces than I do…:-)

Preheat the oven to 180C. Grease and line a 20cm square tin.

Melt the butter and chocolate together in a bowl set over a pan of simmering water. Take off the heat and set aside to cool a little. Whisk the eggs, sugar and vanilla very well together until the mixture is quite thick. Stir in the flour, cocoa powder and most of the broken Oreos, keeping a few for the top. Spoon the mixture into the tin and place the remaining Oreos on top.


Bake for 25-30 minutes or until just set. The brownie should looked cooked around the edges but still have a little wobble in the centre.  Leave in the tin for a couple of hours until completely cold then cut into squares.


If you prefer, you can leave the Oreos whole 🙂
