Lazy Sunday baked omelette

Apparently today is National Lazy Day…I wasn’t planning to do very much at all today so perfect timing 😉

This is a great recipe for lazy days when you fancy something substantial but a little lighter than a full on cooked breakfast.

Lazy Sunday baked omelette

One onion or two shallots, finely chopped
A sprig of fresh thyme, or 1/2 tsp dried
4 rashers bacon, snipped into pieces
About 3 mushrooms, chopped small
6 eggs
100g grated cheese
A heaped dessertspoon of creme fraiche or a little double cream (about 50ml)
Salt and pepper

Preheat the oven to 180C.

Gently fry the onions, bacon and thyme in a medium non stick frying pan until the the onions are soft and the bacon starts to crisp. In a jug, whisk together the eggs, cream, cheese and salt and pepper. Pour into the pan and place in the oven. Bake for 20 twenty minutes or until puffed up and golden.
