This is a first for me. I don’t usually review ready made sauces on the blog, but when the lovely lady from Lloyd Grossman emailed me and asked me if I would be interested in reviewing the new limited edition mint Masala sauce my eleven year old curry mad son begged me to accept so how could I refuse?
They sent me a rather gorgeous looking curry kit including a Balti dish, a jar each of mint masala and tikka masala, basmati rice and Nan bread.
Quick and easy dinners have been more crucial than ever since I started full time work three weeks ago. After five years of working part time, you could say it’s been a bit of a shock to the system! It’s also meant that I really need to be prepared – which means making meals over the weekend in preparation for the week ahead, using my slow cooker and keeping a few well chosen cheat ingredients on the days when you have just under one hour from finishing work to pick the kids up from the childminder, get them home and fed, then get them organised for the Halloween school disco!
We all really enjoyed the mint masala chicken – I’m generally not a huge fan of jarred curry sauces but this was lovely. It had quite a fresh taste which I wasn’t expecting.
I was really keen to make a prawn mint masala, but I was outvoted – everyone else wanted chicken!
So here is my very simple recipe for chicken mint masala 🙂
Chicken mint masala
One tablespoon of vegetable oil
4 large chicken breasts, cut into chunks (or skinless boneless thighs)
One jar Lloyd Grossman mint masala sauce
One shallot, finely diced
One chilli, chopped (if you don’t mind some extra heat leave the seeds in!)
200ml coconut milk
Heat the oil in a large pan and gently fry the onion and chilli for a few minutes until softened. Remove and set aside. Tip the chicken into the pan and brown. Pour in the mint masala sauce, the coconut milk and the chilli and shallot and simmer for 15 minutes until the chicken is cooked through. Serve on a bed of fluffy rice with warm nan bread.
