These cookies may not look particularly Christmassy, but they are a great recipe for using up those half packets of dried fruits and nuts you bought to make the Christmas cake/pudding! Use any dried fruit and nuts you like – anything goes!
Fruit and nut cookies
200g soft light brown sugar
1 tsp vanilla extract
1 egg, beaten
250g plain flour
1/2 tsp baking powder
75g raisins or other dried fruit
100g rolled oats
50g chopped pecans, walnuts macadamias or brazils
Preheat the oven to 180C. Grease and line a baking tray.
Cream the butter and sugar together until light and fluffy. Add the vanilla extract and egg and beat for one minute. Add the flour and baking powder in and lightly stir until combined. Stir in the dried fruit, rolled oats and nuts. Roll the dough into balls, place on the baking tray and lightly press down on them to flatten slightly. Bake for 12-15 minutes or until golden around the edges.
