Chocolate peanut butter rice crispie bites

I think chocolate and peanut butter are a pretty winning combination, don’t you?

Chocolate peanut butter rice crispie bites

200g smooth or crunchy peanut butter
50g soft butter
200g icing sugar
50g Rice crispies
300g dark or milk chocolate

Beat the peanut butter, soft butter and icing sugar together until smooth and combined. Stir in the rice crispies. Chill the mixture for at least 45 minutes. This will make it much easier for rolling the mixture into balls, so don’t be tempted to skip this part šŸ™‚

Once the mixture has been chilled, roll into balls. I’ll leave the sizing up to you šŸ˜‰

Pop them back in the fridge while you melt the chocolate over a pan of simmering water. When it’s all smooth and melted, use a fork to dip the peanut butter balls in the chocolate, turning to coat evenly. Place on a piece of baking paper or foil and decorate with sprinkles of your choice.
