I have to admit I was a little sceptical about trying rollmop herrings – I had never even heard of them! A quick Google search told me that they are basically fresh herrings, pickled in a spiced vinegar and rolled into a cylindrical shape.
If I’m totally honest they didn’t sound too appealing to me but I’m always up for trying new things, plus my son looked very interested in them and I wanted to encourage his enthusiasm!
I had a quick rummage through the fridge and came up with this healthy salad.
I have to say it really was rather good! I’m feeling inspired to make my own rollmops now – I can imagine they would be worlds apart from the supermarket tubs.
This is my forth and final recipe for Seafish’s Fish is the dish.
Blood orange, beetroot and rollmop herring salad
Half a lettuce, shredded
Bunch of flat leaf parsley, torn up (you don’t want it chopped up finely)
One blood orange, peeled and cut into thin segments
About half a small cucumber, chopped
3-4 baby beetroots, cut in halves
One tub of fresh rollmop herrings
Simply arrange all the ingredients together and serve with crusty bread.
