Apparently these are an old school favourite, although I don’t remember them being served in the canteen during my school years! I wasn’t going to post these because I wasn’t sure they were really blog worthy, but they have proved quite popular on my facebook page today so I thought I’d share the recipe. They are a very simple and quick recipe to make – couldn’t be easier really. I really like the crunchy texture the cornflakes gives these bars, and the addition of oats is reminiscent of a flapjack.
Chocolate Crunch Bars
225 g butter
140g light brown sugar
140 g self-raising flour
1 1/2 tbsp cocoa powder
85 g porridge oats
85 g crushed corn flakes
140 g milk chocolate, chopped into small pieces
Preheat the oven to 180C. Grease and line a 11 x 7 inch tin lined with parchment.
In a large bowl, cream the butter and sugar together, until pale and fluffy.
In a small bowl, sift together the flour and cocoa. Add to the butter mixture.
Then add the oats and corn flakes. Mix well. The batter will be quite dry.
Press into the prepared tin [a potato masher or spoon will help, and bake for about 20 mins.
Mark into 16 bars while still hot, then allow to cool completely in the tin.
Melt the chocolate and spread over the bars. When the chocolate has set, cut the bars into pieces.
