Recently the very lovely Jemma of Iced Jems kindly sent me some baking products to have a play with – nothing makes me happier than receiving baking goodies in the post!
Iced Jems is an online baking shop which has a huge following. Her Facebook page has over 142,000 followers! And no wonder – not only does Jemma run the online shop full of baking supplies, she also has all kinds of inspiring recipes – including Christmas prosecco truffles and cinnamon pretzel twixes!
One of the goodies I received was a mini doughnut mould. I was thrilled and couldn’t wait to try it!
Here is the result – these mini doughnut cupcakes which my taste testers gave a big thumbs up! The silicone doughnut mould is brilliant – the mini doughnuts came out of the mould in one piece without any difficulty at all.
Since my boys are big fans of The Simpsons, I thought it would be fun to make Homer style baked doughnuts. I found the recipe right here on Iced Jems. I followed the recipe and just made up a basic water icing and used Wilton colour paste in rose to make a vibrant pink.
Mini Doughnut Cupcakes
Preheat the oven to 180C. Line a cupcake tin with baking cases or liners.
200g soft butter
200g caster sugar
2 large eggs, beaten
200g Self raising flour
2 tsp vanilla extract
2-3 tbsp milk
Strawberry jam for filling the cupcakes
Cream the butter and sugar together until very light and fluffy. Gradually add the beaten eggs, mixing well after each addition. Stir in the vanilla then fold in the flour until the mixture is smooth. Don’t overmix.
Spoon the batter into the cupcake cases and bake for 20-25 minutes or
until the cakes are risen and golden.
When the cupcakes are cold, use an apple corer to cut a little hole out of the middle of each cake. Spoon a little strawberry jam into the hole, filling almost but not quite to the top.
For the vanilla buttercream beat together 300g icing sugar and 100g unsalted butter until very light and fluffy. If you are using a mixer, place a tea towel over the bowl to protect you and your kitchen surfaces being covered in icing sugar! Add one tsp vanilla extract and a splash of milk, then beat again for several minutes until very light and fluffy.
Ice your cooled cakes and top with a mini doughnut. I’m convinced these cute cupcakes couldn’t fail to make anyone smile 🙂
