Happy Friday! I’m so glad it’s nearly the weekend. It’s been a busy week. I’ve been baking quite a lot over the past few days and I have loads of inspiration for future blog posts, but today I just had to show you these divine pink lemonade bars I made last night. These bars are so good and they couldn’t be easier to make. You have a refreshing raspberry-lemon curd topping on a crumbly shortbread base. So good! The only thing I did differently was to mix all the ingredients for the filling in the food processor, then if you wish you can push the mixture through a sieve to get rid of the raspberry seeds. Taste the mixture before you pour it onto the shortbread base. If it is too tart for your taste, add a little more sugar.
So good! Highly recommended.
