This spicy sausage and pepper traybake recipe takes just a few minutes to prepare and less than 45 hands off time to cook – making it the perfect easy family dinner for a hectic weeknight. Pork sausages in a smoky sweet chilli paste with sliced peppers, potato wedges and onions.
Traybake dinners are one of the easiest family meals you could ever make. You literally throw all the ingredients in a roasting tin and add your flavourings/seasonings.
Then all you need to do is bung it in the oven and forget about it for about 45 minutes!
Dinner in one pan – so convenient, so easy and minimal washing up!
Why haven’t I blogged about traybake dinners before now? I honestly have no idea! I have about five traybake dinners that I make on the regular. I thought it was about time I posted the recipes. I’ll share my all in one traybake recipes with you over the next couple of weeks!

I’m starting off with a sausage traybake supper with sliced onions, peppers and potatoes. I like to use a mixture of sweet potatoes and new potatoes.
I sprinkle everything with dried oregano before adding a spice paste that really packs a flavour punch to this traybake dinner.
If you love a bit of smoky spice, this recipe is definitely for you. I’ve coated the sausages and veggies in one of my favourite shortcut ingredients – chipotle paste. I mix Gran Luchito Chipotle chilli paste with:
- Runny Honey
- smoked paprika
- Garlic paste
- Vegetable oil

I mix all of the above ingredients together until I have a runny paste. The Gran Luchito paste is packed full of flavour, but if you can’t find it any other brand of chipotle chilli paste will be fine to use.

Place the onions, sliced peppers and potatoes in a large roasting tin. Nestle the pork sausages in between the vegetables. Sprinkle everything with some dried oregano.
Take your runny spice paste and pour it all over the sausages and veggies. Now, give everything a good mix together with your hands. Make sure that all of the ingredients are covered in the spice paste.
Place in a preheated oven (200C/180Fan) and bake for about 45 minutes or until the sausages are golden brown, cooked through and the vegetables are charred and soft. Dinner is ready!

can i use different sausages?
Sure! This recipe is super adaptable. You could use chicken or beef sausages instead. Vegetarian sausages would also work well. They might not take as long to cook, so read the instructions on the packet.
can i reheat leftovers?
Yes. If you don’t manage to eat it all in one sitting, leftovers can be reheated the next day. They’ll take 15-20 minutes at 180C/160 Fan, but do keep an eye out in case they start to burn.
can i use different vegetables?
Absolutely. I feel the mixture of new potatoes, sweet potatoes and bell peppers work perfectly with the chipotle spice paste, but feel free to mix it up and try something different. Here are a few suggestions:
- sliced chorizo sausage
- cherry tomatoes
- sliced corn on the cob
- tenderstem broccoli (I would add this in the last 12-15 minutes of cooking)

As I’ve already mentioned, this recipe is a complete meal in one pan. But I do love it with some crusty buttered bread. What can I say? I’m a carbs girl through and through.
If you fancy a bit of sandwich action, the sausages, onions and peppers make a FABULOUS sandwich with some Ciabatta bread and maybe a little garlic mayo. I’m drooling just thinking about it.

Spicy Sausage and pepper traybake
This spicy sausage and red pepper traybake is a fantastic meal that's packed full of flavour - sausages, peppers, onions and potatoes coated in a sweet-smoky chipotle spice paste. It's an absolute winner!
Ingredients
- two onions - I used a mixture of white and red, peeled and cut into small chunks
- 2 red or yellow peppers, deseeded and sliced
- 125g new potatoes, cut into wedges
- one large sweet potato, cut into small wedges (no need to peel)
- 8 pork sausages
- 1 teaspoon dried oregano
- 2 tablespoons vegetable or olive oil
- 1/2 tablespoon chipotle spice paste
- 2 teaspoons garlic paste
- 1 tablespoon runny honey
- sea salt and freshly ground black pepper
Instructions
- Preheat the oven to 200C/180Fan.
- Place the vegetables and sausages in a roasting tin. Sprinkle over the dried oregano.
- Place the oil, chipotle paste, garlic paste and honey in a small bowl and stir well to mix.
- Pour the runny spice paste all over the sausages and vegetables and using your hands, give everything a good mix until well coated in the spice paste.
- Sprinkle with salt and freshly ground black peppper, then bake for 40-45 minutes or until the sausages are golden and cooked through and the vegetables are lightly charred and soft. Remove from the oven and serve as it is or with crusty bread/Ciabatta.
Notes
I find using 1/2 tablespoon of chipotle paste gives a nice amount of heat without being too hot, but it depends on your level of spice tolerance. If you're a little chilli shy or you know your paste is a hot one, you could add 1 teaspoon for a milder flavour.
