If you love homemade mince pies but find them too time-consuming to make during this busy time of year, then you need to try these Puff Pastry Mince Pies. You only need four ingredients and they are so delicious. They can also be made in advance, frozen and heated in a warm oven – very handy when last-minute guests pop in!
Is there a bake that is more festive than a mince pie? I don’t believe there is. Love them or hate them, they are everywhere in December. I LOVE them. Maybe a little too much. I can quite happily pack away two or three in one sitting.
As much as I love a good Christmas baking session, I must be realistic. As a busy Mother with a house to run, work to do and shopping to buy, I rarely have a whole afternoon to bake festive treats.
I always try and find a window of spare time to make my Mincemeat Shortbread and Viennese Mince Pies, but when I’m short on time, these puff pastry mince pies are just perfect.

- Puff Pastry. To make life even simpler, I use a sheet of ready rolled puff pastry.
- Mincemeat – store-bought or homemade. If you feel like making your own, I have a lovely recipe for a suet-free mincemeat with apples.
- Beaten Egg Yolk and Milk, to glaze the pies.
- One optional extra ingredient – icing sugar, to dust the baked pies (although to me, it’s essential for that festive finish!)
how to make mince pies with puff pastry

- Unwrap the puff pastry and cut it into 14 equal sized squares. I got 15 squares from my sheet, so I used the spare to decorate the top of the pies with festive cookie cutters!
2. Add 1 teaspoon of mincemeat to half of the pastry squares, making sure you don’t go too near the edges or the pies will leak.
3. Using your finger, slightly dampen the edges of each square (with the mincemeat) with a little cold water.
4. Place the other half of the pastry on top and seal the edges with a fork.
5. Brush the egg/milk mixture on top of the pies. Try not to let it run down the sides.
6. Bake in a preheated oven (200C/180C/160F) for about 18-20 minutes, or until puffy, crisp and golden brown.

Remove the pies from the oven and allow them to sit for about 10-15 minutes – they are HOT! before serving with tea, coffee or even better, a glass of mulled wine!
They are delicious with clotted cream, whipped cream, brandy butter/cream, custard or ice cream. In fact, may I suggest my no-churn Baileys ice cream to go along with them?
how long do they keep once baked?
These mince pies are best eaten on the day they are made. If you have any leftover, they can be reheated in a warm oven, air fryer or microwave.
can you freeze puff pastry mince pies?
Yes, you can freeze them baked or unbaked. To freeze once cooked, cool them down (they must be completely cold) and place in freezer safe boxes or large freezer bags. Freeze for up to 3 months.
They should be defrosted at room temperature before heating up – this should take no more than a couple of hours. Place the defrosted pies on a lined baking tray and bake at 180C/160Fan for about 12-15 minutes or until piping hot.
tips for recipe perfection
šIt’s very important to seal the edges of the pies with a fork – if you don’t do this, the mincemeat filling will run out all over the tray! šFor the same reason, don’t overfill the pies. One teaspoon of mincemeat is all you need. šOne 320g sheet of puff pastry will give you 7 mince pies. I also used roughly half a 400g jar of mincemeat. If you have any leftover, you could make this oh-so festive apple and mincemeat crumble. šIf you happen to end up with one extra square of pastry (like I did!), don’t throw it away. Grab your Christmas cookie cutters and cut shapes out to decorate the top of the pies.
Puff Pastry Mince Pies
These Puff Pastry Mince Pies are made with ready-rolled pastry - great for when you need a batch of mince pies but don't have time to wait for chilling pastry, etc! They take less than 10 minutes to assemble and 20 minutes to bake.
Ingredients
- 320g Ready Rolled Puff Pastry
- Approximately 220g Mincemeat
- 1 egg yolk, beaten
- 1/2 tablespoon milk
- Icing sugar, to dust the baked pies
Instructions
- Remove the sheet of puff pastry from the fridge and let it sit out for about 15 minutes. This will make it easier to roll out.
- Preheat the oven to 200C/180Fan/160F. Line a large baking sheet with baking parchment.
- Unwrap the pastry sheet into 14 equal-sized squares (or 15 if you want to decorate the tops with spare pastry!)
- Top half of the squares with one teaspoon of mincemeat. Using your finger, lightly brush the edges of the pastry with a little water (you don't need much.)
- Top the mincemeat with the other pastry halves and seal with a fork.
- Place the egg yolk and milk in a small bowl and stir with a fork. Lightly brush the tops of each pie with egg wash, trying not to let it run down the sides.
- Bake for 18-20 minutes or until the pastry is crisp and golden brown
- Remove from the oven and allow them to cool for about 10-15 minutes before dusting with icing sugar and serving with whipped cream, brandy butter, custard or ice cream.
Notes

These mince pies are beaten eaten fresh, but they can be reheated in a warm oven, air fryer or microwave the next day.
Freeze the pies (unbaked or baked, fully cooled) for up to 3 months. Defrost them at room temperature before reheating.
