why boursin makes the perfect pasta sauce
This Baked Boursin Pasta has become one of my go-to dinners when I’m busy (and let’s face it, most of us are busy all the time!)
Boursin cheese is not merely for spreading on bread or crackers, as delicious as that is. It makes an incredible, almost instant sauce for pasta. All you need to add is bake it until it’s lightly tinged golden around the edges and molten.
Add a handful of cherry tomatoes, finely diced onion and crushed garlic, and you have the makings of an incredibly comforting, satisfying dinner. By the time the Boursin has collapsed in the oven, the onions will have caramelised and softened and the tomatoes will be blistered and sweet. Your kitchen will also smell incredible!

- Fresh Parmesan Cheese – the real thing please – that spooky longlife stuff in the tubs should be banned (sorry!)
how to make boursin tomato pasta
Step 1 – Unwrap the Boursin and place it in a square ovenproof dish. I used a 20x20cm pan, which was perfect. Add the finely diced onion and cherry tomatoes. Sprinkle over the crushed garlic and season with freshly ground black pepper.

Step 2 – Bake in a preheated oven – 180C/ 160Fan/ 350F for about 20 minutes, or until the onions and tomatoes have softened and the Boursin is molten.

Step 3 – While the Boursin is in the oven, cook the pasta according to the packet instructions. Don’t forget to save a decent-sized cupful of the starchy water when you drain it!

Step 4 – Add the drained pasta to the pan with the Boursin and tomatoes, add the crumbled stock cube, spinach leaves (the heat will cause them to wilt), a good splash of pasta water and stir well. You might need to add a little more of the reserved pasta water to get a nice, silky sauce.

Step 5 – Season to taste with salt and pepper, then scatter the fresh basil over the top. Finish off by sprinkling with a generous handful of grated Parmesan cheese.

Boursin pasta is so filling and rich that no other accompaniments are required, but it pairs beautifully with:
- Grilled chicken or fish
- Hot garlic bread
- A green salad
- A green vegetable, such as broccoli or green beans

reheating instructions
This pasta dish is best eaten freshly made, but leftovers can be reheated the next day. Place the pasta in a pan, add a splash of freshly boiled water from the kettle or some milk and heat gently, stirring often until very hot.

Unfortunately no – I would not recommend freezing Boursin pasta. The Boursin will separate in the freezer and turn a funny texture once defrosted, ruining the dish.
Yes! You can use any pasta shape you like – but I personally think a tube-shaped pasta, such as Penne, Fusilli or Rigatoni work best for this recipe.
Yes – if you wanted to, the onion and spinach can be omitted without affecting the recipe in a bad way.
