This quick and easy minced beef hotpot is the perfect recipe to make when you’re in the mood for something warming and comforting but don’t have a lot of time.
Minced beef and diced carrots in a rich gravy topped with crispy sliced potatoes and covered in grated cheddar cheese. Similar to a cottage pie, but much quicker!

This easy hotpot with minced beef in gravy , sliced potatoes and lots of melted cheese is a great family meal to make when you’re a little short on time but still want to make something warming, filling and hearty.
My mince and tatties recipe is hugely popular and proves that we all love simple comfort food. I guess you could think of this quick minced beef hotpot recipe as a quicker, simpler version.
Since we’re cooking the mince for a shorter amount of time, I’ve added a few extra ingredients such as soy sauce, Worcestershire sauce and dried thyme and rosemary to add a deeper depth of flavour. I hope you love it as much as my family do!

- one tablespoon olive or vegetable oil
- One large onion, peeled and diced
- 2 large carrots, peeled and diced into small pieces
- Half a stick celery, finely chopped (optional)
- 2 garlic cloves, peeled and crushed
- 500g minced beef (10-15% fat)
- ½ teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1 tablespoon plain flour
- 400ml beef stock
- 2 tablespoons Worcestershire sauce
- 2 tablespoons dark soy sauce
- Salt and freshly ground black pepper
- 400g new potatoes, sliced into rounds
- 75g grated cheddar cheese – I use a mature cheddar

- You’ll need a large, deep frying pan that can safely go under the grill to make this recipe. I use this Prestige x Nadiya Cast Iron Skillet and LOVE it.
- You’ll also need a sturdy wooden spoon to break up the mince while it’s browning.
- a medium saucepan to pre-cook the sliced potatoes.
step by step instructions
Step one – Heat the oil in a large, fairly deep saucepan – (it must be oven/grill safe). Add the diced onion, carrots and celery and cook for around 5-8 minutes or until softened but not browned, stirring occasionally.
Step two – Add the garlic, rosemary and thyme and cook for a futher two minutes, stirring often so the garlic doesn’t burn.
Step three – Turn the heat up and add the minced beef. Break up the mince with a wooden spoon and cook until well browned, about 5 minutes.
Step four – Stir in the plain flour and cook for a minute, then stir in the beef stock, Worcestershire sauce, soy sauce and add a little seasoning. Turn down the heat to low-medium and cook for 20 minutes or until the gravy has thickened.
Step five – While the mince is cooking, cook the potato slices. Place them in a pan of lightly salted boiling water and cook for about 8-10 minutes or until softened but not so soft they are falling apart. Remove the potatoes from the heat and drain in a colander.
Step six – Preheat the grill on a medium-high heat. Layer the potatoes on top of the cooked mince and gravy. Sprinkle over the grated cheese and grill until the potatoes are browned and the cheese has melted.

Need to make the recipe dairy free? Just skip the cheese and drizzle a little olive oil over the top of the potatoes instead.

This quick and easy minced beef hotpot is the ultimate family comfort food meal. It's made in one pan and takes just 45 minutes to make.
Ingredients
- 1 tablespoon olive or vegetable oil

- Stir in the flour and cook for a minute or so, then stir in the beef stock, Worcestershire sauce, soy sauce and a little salt and freshly ground black pepper. Turn down the heat to low-medium and cook for 20 minutes or until the gravy has thickened and the carrots have softened. Check to see if you need to add more salt and pepper.
- While the mince is cooking, cook the potato slices. Place them in a pan of lightly salted boiling water and cook for about 10 minutes or until softened but not breaking up and disintegrating. Remove from the heat and drain in a colander.
- Preheat the grill on a medium-high heat. Layer the potatoes on top of the cooked mince and gravy - don't worry about getting it too neat and even, this is meant to be rustic. Sprinkle over the grated cheese and grill until the potatoes have browned nicely and the cheese has melted. Serve with your favourite vegetables.
