Pumpkin Cranberry Maple Glazed Muffins


Since today is Thanksgiving in the US, I thought it would be a perfect time to share this muffin recipe with you all.

The idea of baking with pumpkin isn’t as popular here as it is in the US but it’s something that has always appealed to me.

Autumn and Winter are absolutely my favourite seasons for many reasons. Everything looks so pretty at this time of year. I actually look forward to bundling up in my warm, cosy jumpers and hats and going for long walks, kicking huge piles of leaves with the kids.

The excitement of Christmas just around the corner.

Snuggling on the sofa with a blanket and a huge mug of hot chocolate watching cheesy Christmas movies.

Pumpkin spice and gingerbread lattes.

What are your favourite things about this time of year?

Pumpkin cranberry muffins with maple glaze

275g Plain flour
2 tsp Baking powder
1/4 tsp Bicarbonate of soda
1 tsp ground Cinnamon
1/2 tsp ground ginger
A pinch ground nutmeg
100g soft butter
200g light brown sugar
2 eggs, beaten
1/2 tsp vanilla
180ml Pumpkin puree
60ml buttermilk or plain yoghurt
75g Dried cranberries
50g chopped pecans
25g pumpkin seeds, plus a few extra for sprinkling on top

Preheat oven to 200C. Line a 12 hole muffin tin with liners or spray with cake release spray.

Beat the butter and sugar together until very light and fluffy. Add the eggs, a little at a time. When they are fully incorporated, add the pumpkin puree and vanilla. Fold in the flour and spice mixture and stir very lightly until only just combined. It’s ok if there are a few lumps. Stir in the buttermilk/yoghurt, cranberries, pecans and pumpkin seeds, reserving a few seeds for sprinkling over the top. Take care not to overmix.

Spoon the mixture into the muffin tin and sprinkle the reserved pumpkin seeds over the top. Bake for 20_25 minutes until well risen and golden. Transfer to a wire rack and allow to cool.

Maple glaze

125g Icing sugar
1-2 tbsp maple syrup

Mix the icing sugar and maple syrup together until you have a fairly think icing but will still drip from a spoon. Messily drizzle over the waiting muffins.
