Are you a fan of pumpkin spice? Then you must take a look at my pumpkin spice granola recipe!
Owning an air fryer has been a game changer for me. I use it pretty much every single day, so it was definitely worth the investment.
A quick and easy granola recipe
Granola is a versatile and nutritious addition to your breakfast routine, but have you ever tried making it in an air fryer? This quick method guarantees a crunchy texture that will elevate your granola game to a brand new level.
When you think about it, an air fryer is actually perfect for making granola. The hot air circulation within the fryer ensures an evenly toasted granola mixture, resulting in a crisp and golden finish. This eliminates the need for constant stirring that oven baked granola requires, saving you both time AND effort.
Let me walk you through the steps to create the perfect batch of crispy air fryer granola!
ingredients
Scroll to the bottom of the post for the printable recipe card with ingredient amounts – this is just a quick run through of what you need to make the granola!
- Oil. I like coconut oil, but vegetable, sunflower or light olive oil is also fine.
- maple syrup or runny honey (golden syrup will also work)
- vanilla extract
- rolled medium oats
- ground cinnamon
- fine salt
- mixed seeds such as sunflower, sesame, linseed or pumpkin seeds.
- mixed raw nuts – I use pecans, hazelnuts, almonds or brazil nuts.
- dried fruit – I like dried cherries, raisins, dried apricots and cranberries.
- an egg white. This might sound a little strange, but the protein in the egg will give you extra crunchy granola clusters!
how to make it
Step one: Melt the wet ingredients – the oil, maple syrup and vanilla extract – in a small saucepan. Preheat the air fryer to 160C/320F
Step two: Combine the dry ingredients – the oats, ground cinnamon, salt, seeds and nuts together in a large bowl.
Step three: Pour the melted oil mixture over the oats, nuts and seeds. Mix well with a wooden spoon until everything is well incorporated.
Step four: Whisk the egg white in a small bowl until foamy (you just need to break it up, which just takes a few seconds).
Step five: Pour the whisked egg white over the oats, then give everything a really good stir once again.
Step six: Place a piece of baking parchment in the base of the air fryer, then spoon the granola on top in an even layer. Don’t overcrowd the fryer or the granola will not crisp up. You might need to cook the granola in two batches, depending on the size of your air fryer.
Step seven: Air fry the granola for about 8 minutes, then turn up the heat to 180C/350F and air fry again for a further 3-4 minutes, or until the granola is golden and crunchy.
Step eight: Using the baking parchment, carefully remove the granola from the air fryer basket and place on a counter top to cool completely.
TOP TIP! Don’t stir the granola yet – leave it until it is cold. This will ensure you get those lovely big crunchy granola clusters.
Step nine: Once the granola has cooled, stir in the dried fruit. Transfer to an airtight container.
serving air fryer granola
- Breakfast bowl: Fill a bowl with your favourite yoghurt, then top it with a generous serving of granola. Add fresh fruits such as berries, sliced bananas, apples or pomegranate seeds and a drizzle of peanut butter, maple syrup or honey for a tasty and nutritious start to your day.
- with fruit compote: Granola is perfect with Greek yoghurt or Kefir and a fruity compote, such as this ginger peach-blackberry compote.
- As a snack mix: combine air-fried granola with a few chocolate chips for an indulgent homemade trail mix.
ingredient substitutions
As long as you keep to the same ratios, you can make the following ingredient substitutions:
- Oil: Any flavourless oil will work in this recipe – sunflower, vegetable, coconut or a mild and light olive oil can all be used successfully.
- You can swap the maple syrup for honey or golden syrup, although the latter will give a much sweeter result.
- Use your favourite spice – for example, swap the ground cinnamon for ground ginger, mixed spice or pumpkin spice.
- Add whatever dried fruit you love – anything goes! Dates, chopped mango, crystallized ginger, cranberries or dried apple are all great.
- omit the nuts: If you can’t eat or don’t like nuts, simply leave them out. You could always add more dried fruit or add a handful of chocolate chips instead.
storage
Store the granola in an airtight container or jar. It will keep for up to two weeks.
freezing
Store the granola in a zip lock freezer bag and freeze for up to three months. Allow to defrost completely before serving.

Air Fryer Granola
Get ready for the week ahead by making a batch of this Air Fryer Granola. It takes less than 15 minutes to make perfectly crunchy, crisp granola to serve with yoghurt, milk or just for snacking on!
Ingredients
- 1 tablespoon coconut oil, (or vegetable, sunflower or light olive oil)
- 4 tablespoons maple syrup, honey or golden syrup
- ½ teaspoon vanilla bean paste or extract
- 125g medium rolled oats
- 1 teaspoon ground cinnamon
- ½ teaspoon fine salt
- 100g mixed seeds such as pumpkin, sunflower, sesame or linseed
- 120g mixed whole (raw) nuts such as almonds, brazils, pecans or walnuts
- 1 medium egg white
- 70g dried fruit - I used a mix of dried cherries, chopped apricots and raisins
Instructions
- Preheat the air fryer to 160C/320F.
- Gently heat the oil, maple syrup and vanilla in a small saucepan until melted. Remove from the heat and set aside for a moment.
- In a large bowl, mix together the oats, ground cinnamon, salt, seeds and nuts. Pour over the melted oil mixture and stir well until everything is well-coated.
- Whisk the egg white until foamy, then pour this over the oats, mixing well again to coat all of the ingredients.
- Place a sheet of baking parchment in the base of the air fryer, then add the granola on top, leveling with a spoon in an even layer. Don't overcrowd the basket. If you have a smaller air fryer, then you might need to bake the granola in two batches.
- Air fry the granola for 8 minutes, then turn the fryer up to 180C/350F and air fryer again for a further 3-4 minutes or until the granola is golden and crunchy.
- Remove the granola from the air fryer basket by carefully lifting the corners of the parchment. Allow to cool (don't stir it until it is almost cold or you won't get clusters), then stir in the dried fruit.
Notes
Serving: Serve the granola with yoghurt, milk and fresh fruit of your choice.
Storage: Store the granola in an airtight jar. It will keep for up to two weeks.
If you don't eat eggs, you can omit the egg white.
