I’m still using up the lovely big bag of apples I received last week. Here’s a lovely recipe to make the most of the fruit of the season ๐
Apple & Blackberry Flapjacks
160g butter
100g demerara sugar
100g golden sryup (I ran out of golden syrup while making these so I used 50g golden syrup/50g treacle. The treacle made the flapjacks a little less sweet as usual, the treacle flavour is subtle but it does come through)
300g oats
One large eating apple, peeled and chopped
75g blackberries
Grease and line a 20cm tin.
In a large saucepan, melt the butter, sugar and syrup.ย Once melted take the pan off the heat and stir in the oats. Mix well. Stir in the chopped apple and the blackberries, keeping a few aside. Pour into pan. Stud the top of the flapjack mixture with the remaining blackberries.ย Bake at 180c for 25-30 mins. Leave in tin until completely cold before slicing.
