Have you ever tried roasting potatoes in an air fryer? If you haven’t, you must try it!
Like my air fryer rotisserie whole chicken, air fryer chicken wings with hot honey butter and air fryer chicken fajita recipes, it is a total game changer.
I’ll be honest. For me, nothing beats proper oven cooked crispy roast potatoes. There is nothing more delicious. BUT I would also be more than happy to eat air fryer roast potatoes any day of the week.
why use an air fryer?
One of the main bonuses of using an air fryer to cook roast potatoes as part of a Sunday roast is saving on oven space. If you have a small oven but love to cook a roast dinner for your family, then you’ll understand the hassle of trying to fit everything in the oven and making sure everything is cooked properly.
You need a fairly large baking tray to cook roast potatoes and when you’ve also got the meat, stuffing and roast veg or Yorkshire puddings in at the same time….it can be pretty stress-inducing!
Another advantage of using an air fryer? They are a little bit healthier. You only need two tablespoons (30ml) of oil to cook them! Just pass me a bowl with a good sprinkling of flaky sea salt please…..

- Floury potatoes such as King Edward or Maris pipers work best for roast potatoes.
- Oil to coat the potatoes. You’ll need two tablespoons. You can use olive (not extra virgin), sunflower or vegetable oil.
- Sea salt and freshly ground black pepper for seasoning.
- optional seasoning – I give the potatoes a little extra seasoning with a little dried rosemary, onion salt and garlic granules. You could use any type of seasoning you like – swap the rosemary for dried thyme or Italian seasoning.

how to make air fryer roast potatoes
Step 1: Preheat the air fryer at 190C (375F) for 3-5 minutes. Place the peeled and quartered potatoes in a bowl.
Step 2: Add the oil, salt and pepper and the extra seasoning if using. Using your hands or a large spoon, give everything a good stir, making sure all the potatoes are coated in oil.


Step 3: Place the potatoes in the preheated air fryer. Cook for about 25 minutes or until the potatoes are golden and crisp. By now they should also be soft and fluffy in the middle.
TOP TIP – you need to open the basket to check on the potatoes every 10 minutes or so to make sure they are cooking evenly. You might need to turn the potatoes with some tongs. I find giving the basket a good shake is all you need to do.

do you need to parboil the potatoes?
I’ve tested this air fryer recipe with parboiled potatoes and raw potatoes. The verdict?
The parboiled potatoes were a little bit crispier on the edges. If you have the time and would rather parboil them, cook the potatoes in boiling salted water for 7-8 minutes or until they are beginning to soften slightly.
If you don’t have time to parboil, don’t worry too much about it – the air fryer still does a terrific job of crisping up the potatoes. Personally, I found the end result wasn’t worth the extra hassle.
what potatoes are Best for roasting?
The best variety of potatoes for roasting are the floury type such as King Edward, Maris Piper or Desiree. When these potatoes are cooked, the edges turn fluffy which is what gives you those much desired crispy, crunchy edges.
If you live in America, Yokon Gold would be the best choice for roast potatoes.

how to tell if roast potatoes are properly cooked?
To check if the potatoes are fully cooked, pierce a potato with a skewer or sharp knife. The knife should go through easily and the potato should be nice and soft in the middle. They will also be golden brown and crispy (they crisp up beautifully in the air fryer!)
can you Reheat cooked roast potatoes in the air fryer?
Yes! You can use your air fryer to reheat the potatoes. The good news is it’s incredibly easy! Simply preheat the air fryer to 180C (350F) for 3-5 minutes. Add the potatoes and heat for 4-5 minutes or until crispy and piping hot on the inside.

- Don’t cut the potatoes too large. If your potatoes are too large, they’ll take a long time to cook. They could also turn out hard in the middle – and there’s nothing more disappointing than biting into a rock hard roastie!
- I take Nigella Lawson’s lead and cut the potatoes into three at an angle, so you should be left with a triangle shape in the middle. If you’re working with a massive potato, you’ll probably need to cut it into four pieces. This gives the potatoes maximum surface area for crispiness!
- Steam dry and shake your potatoes. If you’re parboiling, it’s very important to steam dry the potatoes. Simply leave the potatoes in the colander for about five minutes before giving them a good shake to fluff them up (like a polaroid picture.)
- Don’t overcrowd the air fryer. It might be tempting to chuck in all the potatoes at once, but if you don’t have a huge basket, I really wouldn’t advise it. If the basket is too full, the potatoes won’t crisp up properly. If you have a small air fryer, you might need to make them in two batches.

Air Fryer Roast Potatoes
These easy air fryer roast potatoes are incredibly simple to make. Perfectly golden, crunchy and fluffy on the inside roast potatoes in under 25 minutes.
Ingredients
- 900g (about 8 or 9 large) floury potatoes, peeled and cut into four equal sized pieces (see recipe notes)
- 2 tablespoons olive oil (or sunflower or vegetable oil)
- 1 /2 teaspoon crunchy sea flakes
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon onion salt (optional)
- 1/4 teaspoon garlic granules
- 1/2 teaspoon dried rosemary (optional)
Instructions
- Preaheat the air fryer to 190C (375). If you're parboiling the potatoes, cook them in a pan of boiling salted water for about 5-8 minutes or until just beginning to soften. You want a knife to go through them easily, but they shouldn't be falling apart. Drain the potatoes in a colander and allow to steam dry for about 5 minutes before giving them a good shake to fluff up the exterior. Sprinkle over the salt, pepper and seasonings if using, then pour over the oil.
- If you're not parboiling, place the potatoes in a large bowl and pour over the oil. Add the salt and pepper and optional seasonings and using your hands or a spoon, stir well, making sure the potatoes are well coated in oil.
- Add the potatoes to the air fryer (I have a 4.3 litre capacity fryer so if yours is smaller, you'll need to cook the potatoes in batches) and cook for 20-25 minutes. Remove the basket from the air fryer two or three times during cooking time to give them a little shake and a turn to make sure they are cooking evenly.
- When the potatoes are golden, crisp and soft on the inside (to test pierce a potato with a sharp skewer) transfer to a serving plate and sprinkle with a little extra salt if desired.
Notes
A floury potato such as Maris Piper, King Edward or Desiree is essential for a fluffy roast potato with crunchy edges.
For extra crunch, sprinkle the potates with 1 tablespoon of plain flour or semolina before cooking.
Don't overcrowd the basket or the potatoes won't crisp up properly. If you need to double the recipe, you'll need to cook the potatoes in two batches.
Reheating instructions: To reheat leftover roast potatoes, place in the air fryer (180C) and cook for 4-5 minutes or until piping hot.

Will this work in the air fryer oven? Would I need to alter temperature or times?
Hi Charmain, I only have a regular air fryer so I haven’t tested this, but I don’t think you would need to adjust the temperature and cooking time. If you give it a try, just keep an eye on the potatoes to make sure they aren’t cooking too quickly.
